Seville oranges are in season at the start of the year and that’s when they have the highest pectin content. The zest and the pips contain more pectin than the flesh.

Oranges and marmalade (2014)

Ken talks to Robert Parker, factory manager for Wilkin & Sons Ltd about the production of marmalade.

The oranges used for the marmalade are selected from growers in Seville in Spain.

Pectin is a fiber found in fruits and vegetables that thickens when heated and mixed with liquid, making it a key ingredient in jams and jellies.
