Allan Joyce runs the Tranquil Waters Aquatic Centre in High Ongar. The 15-acre koi farm in the heart of the Essex countryside is registered by the Agriculture, Fisheries and Food Authority and Cefas (Centre for Environment, Fisheries and Aquaculture Science).
